Salad with figs, apple and goat cheese pistachio balls
After Saladay, Annie Pannie was most proud of her salad with fresh figs and goat cheese balls. Anyway, figs are of course ultra photogenic. But the spiced goat cheese balls with pistachio crumbs also look super cute!
Ingredients

1 | crisp-sweet apple |
3 | fresh figs |
125 g | Bettine fresh goat's cheese natural |
2 tbsp | lemon juice |
1 tbsp | olive oil |
salt and pepper | |
2 tsp. | sumac (on sale at Turkish and Moroccan shops) |
handful of pistachios (unsalted) | |
1 tbsp | finely chopped fresh dill, plus some extra dill tips to garnish |
1 | handful of pomegranate seeds |
Vorbereitung

Geben Sie den Rucola in eine schöne Salatschüssel. Drücken Sie etwas Zitronensaft darüber (etwa 1 Esslöffel) und träufeln Sie etwas Olivenöl darüber. Den Rucola mit dem Dressing verrühren.

Waschen Sie den Apfel und schneiden Sie ihn in Spalten. Die Apfelspalten mit 1 Esslöffel Zitronensaft verrühren und auf den Salat legen.

Preparation
Put the rocket in a nice salad bowl. Squeeze some lemon juice over it (about 1 tablespoon) and drizzle some olive oil over it. Stir the rocket with the dressing.

Wash the apple and cut into wedges. Stir the apple slices with 1 tablespoon of lemon juice and put them on top of the salad.

Wash the figs and cut off the hard stems. Cut the figs into quarters and place them between the apple segments on the salad. NB: there is no need to peel the figs!

Chop the pistachios very finely.

Mash the Bettine natural goat cheese in a bowl. Add the sumac and chopped dill and grind generously with pepper. Mix everything well. Now form small balls of the mixture (the size of a walnut) and roll them through the pistachio crumbs. Place the goat cheese-pistachio balls on top of the salad.
Grind some salt over the salad (or sprinkle some sea salt flakes on top!) and garnish with the pomegranate seeds and some fresh dill tips.
