Mini-Pizzen mit Mozzarella, Ziegenkäse-Perlen und Himbeeren

What actually makes a pizza a pizza; isn't it the tomato sauce and mozzarella that turn a dough into a pizza? Or is it the structure of base, sauce and toppings? We deviate from the standard tomato sauce and opt for a surprising combination of mozzarella, goat cheese pearls, raspberries and basil. Delicious!

Ingredients

for 8 people
1 roll of fresh pizza dough
1 ball of mozzarella (125g)
100 g Bettine goat's cheese Pearls
100 g raspberries
basil

Preparation

    1. Preheat the oven to 200 degrees.
    2. Grate a ball of mozzarella. Cut circles from the pizza dough using a metal ring (10 cm) or a cup. Place them on baking paper and bake for about 10 minutes - the pizzas will be pre-baked. 
    3. Place the grated mozzarella on the pizzas and bake for another 5 minutes. 
    4. Sprinkle the still-warm pizzas with the goat cheese pearls so they stick to the mozzarella. 
    5. Decorate the mini pizzas with fresh raspberries and basil. Serve warm.
