Spinach salad with goat cheese and walnuts

Ingredients

for 4 persons
Salad
125 g Bettine goat’s cheese natural or honey
300 g fresh spinach
75 g walnuts
125 g blueberries
1 shallot
Dressing
1 tbsp white wine vinegar
5 tbsp olive oil
1 tbsp mustard
2 tbsp honey
salt and black pepper, to taste

Preparation

    1. Whisk the ingredients for the dressing in a small bowl.
    2. Shred the shallot and coarsely chop the walnuts.
    3. Put the spinach in a bowl. Stir the dressing into the spinach and season with salt and freshly ground pepper.
    4. Sprinkle the spinach salad with the walnuts, chopped shallot and blueberries.
    5. Crumble the Bettine goat's cheese natural or honey over the salad.

Tip: This salad is also delicious for lunch.
