Spinach salad with goat cheese and walnuts

Ingredients

| 125 g | Bettine goat’s cheese natural or honey |
| 300 g | fresh spinach |
| 75 g | walnuts |
| 125 g | blueberries |
| 1 | shallot |
| Dressing | |
|---|---|
| 1 tbsp | white wine vinegar |
| 5 tbsp | olive oil |
| 1 tbsp | mustard |
| 2 tbsp | honey |
| salt and black pepper, to taste | |
Preparation

- Whisk the ingredients for the dressing in a small bowl.
- Shred the shallot and coarsely chop the walnuts.
- Put the spinach in a bowl. Stir the dressing into the spinach and season with salt and freshly ground pepper.
- Sprinkle the spinach salad with the walnuts, chopped shallot and blueberries.
- Crumble the Bettine goat's cheese natural or honey over the salad.
Tip: This salad is also delicious for lunch.
