Salad with breaded Bettine Pearls and strawberry
This refreshing salad is enriched with crispy Breaded Goat Cheese Pearls, which add a crunchy twist to every bite. It not only looks beautiful, but also offers the ideal balance between crunchiness and creaminess. Besides the goat cheese, the salad contains avocado, strawberries, cucumber and a homemade dressing. 1 | egg |
50 g | flour |
50 g | panko |
3 tbsp | sunflower oil |
100 g | Bettine Pearls |
For the salad | |

1 | ripe avocado |
4 | sweet cucumbers |
150 g | strawberries |
1/2 | red onion |
100 g | salad mix |
For the dressing | |
---|---|
1 tbsp | balsamic vinegar |
1 tsp. | mustard |
1 tsp. | honey |
3 tbsp | extra virgin olive oil |
Preparation

- Beat the egg in a small bowl. Divide the flour and panko between 2 other bowls. One by one, pass the goat cheese pearls through the flour, egg and panko.
- Heat the sunflower oil in a frying pan and fry the breaded goat cheese pearls for about 2 min until golden brown. Drain on kitchen paper.
- Halve the avocado, remove the stone and dice the flesh. Cut the cucumbers into slices. Cut the strawberries into segments. Cut the red onion into thin half rings.
- Mix the extra virgin oil with the vinegar, mustard, honey pepper and salt to make a dressing.
- Stir the salad mix and red onion with the dressing. Divide between a large bowl. Divide the cucumber, strawberry and avocado on top. Garnish with the goat cheese pearls.
