| 100 g | Bettine goat's cheese Pearls |
| 1/2 | avocado, sliced |
| 4 | figs, halved |
| 1/2 | pickled red onion |
| 1 | generous handful of roasted pecans |
| For the dressing: | |
|---|---|
| 2 tbsp | olive oil |
| 2 tbsp | balsamic vinegar |
| 1 tbsp | honey |
| 1 tsp. | coarse mustard |
| pinch | of garlic powder |
| salt and pepper | |
Preparation
-
- Pickled red onion can be bought ready-made, but you can also make it yourself. Then cut the onions into half rings, put in a jar and add 50/50 water/vinegar and a spoonful of sugar. Leave for at least a couple of hours before using.
- Halve the figs and spread with a little olive oil. Heat a grill pan and put them on it until you have those nice grill stripes, roast the pecans.4-5 minutes at 180 degrees in the airfryer is quickest.
- You make the dressing by simply shaking everything together in a sealable bottle. You can pour this over the top or set it aside so everyone can dose for themselves. The rest speaks for itself.
