Carpaccio in a glass with goat cheese
The glasses with carpaccio are a perfect snack to start dinner with or to serve with drinks. The goat cheese pearls, together with the pomegranate seeds, make the glass just that little bit different and extra festive.

2 tbsp | green pesto |
50 g | rocket salad mix |
2 tbsp | pomegranate seeds |
1 | spring onion |
1 tbsp | pine nuts |
1 tbsp | pumpkin seeds |

Preparation

- Toast the pine nuts and finely chop the spring onion.
- Fill the glass with a little arugula lettuce mixture, toasted pine nuts and pumpkin seeds.
- Enhance with some Bettine pearls, the fresh pomegranate seeds and some drops of green pesto.
- Top this with the carpaccio and finish with some arugula lettuce mixture, pomegranate seeds, toasted pine nuts, pumpkin seeds, drops of pesto and, of course, the Bettine goat cheese pearls.
Tip: You can serve a fresh bread roll with it if you like. Enjoy.
